Really sticky chocolate brownies with salted caramel topping

I am very particular when it comes to chocolate brownies.  When I order a brownie I am looking for one that has a firm topping and a melt in the mouth middle.  I love the sticky, gooey, finger licking variety.  I know there are two camps when it comes to how people like their brownies but I can’t stand them when they are too dry.  It is inexcusable because they are so super easy to make.  They are also really inexpensive.

This recipe is so easy in fact that it is suitable to do with children.  My 4 year old and I have loads of fun together cooking and I find that cooking is really educational for him.  One of the lessons he learnt making these is not to dip your fingers in the cocoa powder.   The sight of him trying to scratch the powder off his tongue tells me he won’t be in a hurry to do that again.

Anyway, on to the recipe.  You only need a handful of ingredients, equipment and 30 minutes out of your day. Here is how you make my wonderful really sticky chocolate brownies topped with salted caramel sauce (yum!).

Really Sticky Chocolate Brownies Topped With Salted Caramel

This is a basic recipe for chocolate brownies.  You can add any topping of your choice.  I  love salted caramel and it just so happens that it goes well with the texture of these brownies.  

Ingredients

  • 400 g caster sugar
  • 225 g unsalted butter (cut in to small pieces)
  • 60 g cocoa powder
  • 1 tsp vanilla extract
  • 4 eggs
  • 225 g plain flour
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 60g walnuts (smashed in to small bits)
  • 100 g granulated sugar
  • 45 g salted butter (room temperature) (cut in to small pieces so that they melt easier)
  • 60 ml cream (double or whipped)
  • 1/2 tsp salt

Instructions

To make the brownies

  1. First melt the unsalted butter and then add in the ingredients in the order listed all the way down to (and including) the walnut pieces.

  2. Mix well and bake in a greased baking tin at 180 C / Gas Mark 4 for 20 - 25 mins.  Keep checking on them and pull them out when they are at the consistency you want.  Don't forget that they will continue to cook for a while once you have got them out of the oven.

Whilst they are in the oven it's time to make the salted caramel topping

  1. Heat the granulated sugar up slowly on a medium heat.  Keep stirring it until it turns in to liquid.  Be careful not to burn it.

  2. Using a whisk add the butter to the pan and keep stirring until it is melted. 

  3. Add in the cream. Be warned that it could bubble up at this point. So add it slowly and continue stirring. Bring to the boil.

  4. After a minute of boiling, remove from heat, add the salt and leave to stand. 

Once the brownies and the caramel have cooled, drizzle the sauce over the top and tuck in!

    You may not use all of the salted caramel in this recipe. It does depend on how much you like salted caramel (I used it all!).

      Wow, these look gorgeously gooey 😍. Your comment about your little boy and the cocoa powder made me laugh – I made chocolate cake with my daughter last weekend and only just managed to stop her from eating some of it! I guess it looks like chocolate and it smells like chocolate…
